1 pkg. King Kullen Butternut Squash Veggie Noodles (Any veggie noodles will work – sweet potato, carrot, zucchini and beets are also available)
1 tbsp olive oil
1/2 tsp sea salt
1 tsp taco seasoning
1/2 cup salsa
1/2 can black beans
1 cup corn
1/2 cup shredded cheese
Hot pepper (optional)
Preheat pan on medium heat and drizzle oil. Add King Kullen Butternut Squash Noodles and salt. Cover noodles and cook for about 10-15 minutes or until noodles are tender.
Stir in taco seasoning and salsa. Add black beans and corn, stirring. Sprinkle with shredded cheese, cover and cook for about 5-10 minutes.
Serve with your favorite toppings. Avocado, sour cream or Greek yogurt, sriracha and salsa are just a few of our favorites.
